Setting up Nginx blocks and Let's Encrypt HTTPs certs

Starting from a barebones Ubuntu install with only SSH-key logins and Nginx set up, we set up Nginx server blocks, install Let's Encrypt's certbot, point our DNS at the new server and generate free, auto renewing certificates for HTTPS!
